Leftover Indian Food

Do you have waaaay too much leftover Indian food? We had a Diwali party this year and we ordered too much Indian Food. I struggled to figure out some creative ways to eat it here are some recipes I located online to make something new!

Aloo Gobi Patties or cakes made from leftover aloo gobi.
Aloo Gobi Patties

Aloo Gobi Patties- I found this recipe on ModernMrs but when I made it, the cakes fell apart so I adapted it to stick together a bit better.

Take two cups of leftover Aloo Gobi and mash it up well. Mix in one egg and a half a cup of shredded cheese. Roll in a ball and fry in a lightly oiled nonstick pan into small patties. Serve with some Rasam or tomato chutney.

Mumbai Toasties

Vegetable Jalfrezi/Mumbai Toastie - I used this to create one of my favorite things, masala grilled

cheese. I've done this with Aloo Gobi as well.

It's essentially a grilled cheese sandwich with onions, tomatoes, green chutney and Vegetable Jalfrezi. The ultimate comfort food!

Samosas Pav - Take a samosa put it between two buns and put some mint chutney on it.

Indian Naan Quesadillas

Naan Quesadillas - Take two triangles and throw shredded cheese and onions and green peppers between them. Easy cheesy Indian Quesadilla.

Samosas Pav - Take a samosa put it between two buns and put some mint chutney on it.

Yogurt Rice

Yogurt Rice - Also known as Curd Rice or Thayir Saadam this is a South Indian staple. The easy way is to warm up the leftover rice and mix it with yoghurt or raita and a little spicy indian pickles. Mix them together and enjoy. If you want to make it more authentic, make a "tempering" of oil, ginger, curry leaves, cumin and mustard seeds. Heat or medium heat to activate and mix with the yoghurt and rice.
